Esther Mwekali from Kenya will be preparing Kenyan Chicken Pilau, via Zoom, on Sunday, Sept. 5, at 4 p.m. The recipe is in the Diversity Coalition’s online cookbook if you would like to check out the ingredients needed.
Esther grew up in Kenya as an orphan, completing her middle and high school education at the By Grace Children’s Home outside of Nairobi before moving on to college. She will be graduating with a BA degree in counseling psychology from Africa International University in Kenya, and has been accepted to California Baptist University to study counseling psychology, with an emphasis on marriage and family therapy.
